Anchovies

Fresh anchovies are on oily fish that look and taste similar to sardines. They vary in size and can be bought either fresh or cured. Cured anchovies were originally left whole and packed in salt, but now they tend to be boned, cleaned and preserved in salt or oil and sold in vacuum pack.

Preparation

Dried anchovies (ikan bilis in Malaysia) in traditional market in Asia is really a good deal. But the view of neatly arranged varieties of dried anchovies is to deep fry them with peanuts. The deep fried anchovies and peanuts are then coated with chili paste. This is known as "sambal kacang" and is part of dishes to be served with steamed rice.
